Aphrodite’s Love – roots and power

Feast and feel. Emote and receive. Love is the gift you give yourself when you prepare this magical meal. Infuse yourself and those around you with the endless devotion of the Goddess within.

2 small beets, ¼ sweet onion, small head garlic, ½ lb pasta of choice (cooked according to package instructions), reserved pasta water (if needed), 1 15 oz can great northern beans (drained), dash cumin, salt & pepper to taste, 3 oz feta, plus more for serving, breadcrumb mix for topping

Preheat the oven to 400 F. Quarter beets and wrap in tinfoil with salt, pepper and olive oil. Do the same for the onion and garlic (leave the head whole but cut off the top). Roast for one hour. 

While veggies are going, make the breadcrumb mix. Add a drizzle of olive oil to a pan and add around ¼ cup of plain breadcrumbs, ½ tablespoon of chopped walnuts, and a ½ tablespoon pumpkin seed. Toast until golden brown. Season with salt, pepper, dried oregano, onion powder, and garlic powder. Add some lemon zest as well.

When veggies are fully roasted and soft, add to a blender with the beans, feta, cumin, salt and pepper. At this point you can add some pasta water to help blend. Once smooth, add to the pot with drained pasta. Mix, adding pasta water as needed. 

Serve with crumbled feta and the breadcrumb mix.
